Core thermometers are indispensable for large meat pieces.
Digital core thermometers are best suited for smoking, which measure the temperature via a probe in the meat and send the measurement data via a cable to a display outside the pit. Thus, without opening the lid, you can constantly monitor the temperature inside the piece of meat.
The high-end version in this area, specially developed for smokers, is the legendary Maverick ET73, or the successor Maverick ET 73/2.
This thermometer uses two probes to measure the temperature in the meat on the one hand and the temperature in the pit at the height of the meat on the other. Thanks to a freely programmed measuring range, it warns not only if the temperature is too high, but also if it falls below a previously set value.
